What is the difference between Dry Pasta and Fresh Pasta?
Generally Dry Pasta includes 20% enriched flour
to make it more convenient and to make it cheaper.
Our Fresh Pasta is made from the centre of Durum Semolina wheat and that special ingredient provides the best flour to make Fresh Pasta.
Fresh Pasta made of Durum Semolina is very delicate,
and so needs a large volume of water due to the adverse affects of humidity and temperature.
The appeal of Fresh Pasta is the fresh taste and texture,
and that it also has a feeling all of its own, and makes any dish great.
It is also different from Dry Pasta al dente in having a smooth quality.
When you eat Fresh Pasta slowly it sticks together therefore we suggest
that you eat your Fresh Pasta hot, for the most delicious mealtime experience.
Another wonderful thing about Fresh Pasta is
that it matches both cream sauce and thick sauce dishes.
What is Durum Semolina?
Durum Semolina wheat is cultivated in the Mediterranean,
North Africa, Central Asia and the continent of America.
The plant is not cultivated in Japan
as it is ideally grown in low humidity and with high temperatures.
"Semolina" means that it is coarse so it's not like other flour.
We are asked sometimes "Why don't you make your pasta with Japanese flour?"
Why? Quite simply because only when Durum Semolina is used can it truly be called Pasta.
